Hard cider is a booming industry in New York state with over 5 million gallons produced annually. As hard cider becomes more popular and producers rush to fill the market, entrepreneurs look to our Cornell Craft Beverage Institute for resources, services and educational trainings.

In partnership with the Cider Institute of North America (CINA), we work to develop a quality-driven and sustainable cider industry through education and research. Our experts can assist hard cider producers with everything from apple selection and best production practices to laboratory analysis and fermentation trials.
