Chang Chen

My research program focuses on developing novel postharvest technologies to improve food quality, safety and sustainability of specialty crops and other agricultural/food products, and valorization of their byproducts/wastes for value-added applications. There are currently three major research interests: 1) Value added processing technologies (such as microwave vacuum drying, infrared drying, pulsed electric field processing, etc.) for food products with preserved quality; 2) Novel sensing techniques for food quality and safety evaluation using optical/spectral approaches (such as hyperspectral imaging, fluorescence fingerprinting, computer vision, etc.); 3) Artificial intelligence and machine learning tools for better food process monitoring and control. Our interdisciplinary research works encompasses fundamental and applied aspects of food process engineering, food chemistry, agricultural engineering, material science and computer engineering. 

My extension program on postharvest technologies aims to support and educate the stakeholders of New York State food and agriculture sectors (with a particular focus on specialty crop and food industry) through application-directed scientific research, technology transfer and dissemination, communications.
