Sea moss gel is increasingly popular, but what do we actually know about its food safety? This webinar brings together Cornell research on commercially available sea moss products, sea moss gel storage, and an analysis of 112 YouTube preparation videos. We will explore how sea moss is prepared, what happens when dried sea moss becomes a high-moisture gel, what consumers are being told online, and where important food safety gaps remain. Practical considerations for preparation, refrigeration, shelf-life, and commercial production will also be discussed.
